My mind usually wanders to food somehow each day.
So with the 24 Day Challenge I'm doing, I decided I really wanted to be a bit more creative with my meals, compared to the time I did the 10 day cleanse when I had a lot of repeat meals. As promised here are some healthy yummy recipes for you!
Balsamic Fuji Salad
2 Cups romain Lettuce
1 cup baby spinach
1 green apple, chopped
1/2 cup grapes, chopped
3 rings of a medium red onion, chopped
4oz of grilled Chicken breast, chopped
2 TBSP of Fat free balsamic vinaigrette
30 string beans, steamed
4 oz grilled chicken breast, chopped
1/4 cup frozen raspberries
1/4 cup frozen blueberries
1/4 cup frozen blackberries
Blend the frozen berries to chunk them up, microwave for 2 minutes to
create a ''chutney'' sauce. Pour over beans and chicken.
10-12 egg whites
1/2 jalapeno chopped
3 rings of red onion, chopped
1/2 cup spinach
Chop the spinach and mix all ingredients, pour into muffin papers,
fill 3/4 full. Bake at 375 for 20-25 mins. Makes about 6 muffins.
Sweet Fall Oats
1/2 cup old fashioned oats (dry)
3/4 cup chopped green apple
2 tbsp PB2
Spray a skillet with non stick spray, toss in apples on medium heat and
add cinnamon to taste. Cover with lid to steam the apples till tender.
Mix dry oats with dry PB2. When apples are done add to oats and mix!

So I don't know about the rest of ya'll but my monday was pure monday. It just sucked. I was ready to go to bed with in an hour of getting up. Everyone else I ran into seemed to be having the same experiences! What the heck!? Well cheers to a better tuesday! I'd love for this week to pick up a little bit. This girl right here has Thursday AND Friday off. Its a very rare occasion when I have 2 days off in a row. And I'm estatic, all though I have an staff meeting to go to on Thursday afternoon, but thats okay, free fruit bowl and I get OT pay for being there. No complaints!!
