Recipes, Reviews and Bodies.

Good Morning!

I hope everyone is enjoying this extended winter..
Not.

Thumbs down for Kansas.

We got lucky, in a sense, and just got  a couple inches. The worst of it is really the wind, it just cuts through you. I'm so ready for spring. I've tried my hardest to hint at Mr. Winter that its over between us but he is just not getting it. I'll be so happy when it's warm and sunny, more than one day a week.

Today I've got a few random things for you.

I've had a few people ask about our car we got and how we like it because they are interested in a similar car. So real fast here's a mini review:
We got a 2014 Subaru Impreza 2.0i Sport.

We choose it after a lot of research. Basically we wanted a car that would last us a long time, provide good gas mileage and be able to be a family car for us one day. The Impreza made the IIHS top safety list, so that was a plus for us in the future family aspect. It has five doors and plenty of space for groceries, travel, moving or again, future kids.  It drives very nice, it's smooth, easy handling and comfortable. The all wheel drive is one for our favorite things. With the slick streets and the snow we've really been able to test it out. It is awesome! Its such an upgrade from our last car. The gas mileage so far has been great as well. Overall we couldn't be happier with the car.

Now for some goodies for you guys to try out!

Philly Steak Stuffed Peppers
(These are super filling and my hub really loves them with sweet potato fries)

2 Bell Peppers
1/4 of a medium white onion, chopped
1 Cup of dry brown rice (cooked by package instructions)
2 Slices of Swiss Cheese
6oz of Flank Steak

Cut the tops off of the peppers, de-seed, place in a pan and cover with water and bring to a boil. In a hot skillet, cook the steak with the chopped onion and chop the meat as it cooks. Pre-heat the oven to 350. Once the peppers are tender, drain the water and place in a baking dish, standing up. Layer the peppers with rice and the meat mixture going back and forth until the pepper is full. Top with a slice of swiss cheese ( I use the Fat Free). Bake for approx 20 minutes, until the cheese is melted and has begun to brown around the edges.

I like to serve these with sweet potato fries and that makes for a very filling meal for me and the hubs.

And these Protein Peanut Butter Oreo Truffles
(I actually won a contest hosted by Complete Nutrition with this recipe and sorry if you've seen this already on Instagram)

1 Scoop of Cookies and Cream Protein Powder
1 TBSP Honey
1/3 Cup Water
3 TBSP PB2

Mix all ingredients together, form ball shapes with hands. Makes about a dozen. Can freeze these as is or lightly cover with peanut butter and freeze also. They are super delicious after about 10 minutes in the freezer!

And last random thought, let's talk bodies.

So on here and on instagram I talk about my past, my body and my changes. I was overweight and unhappy. My starting weight and my current weight and just that of others as well. My "goal" weight is someones starting weight and my starting weight is someone out there's goal weight or a goal along the way. I don't want anyone out there to get offended when I say I was disgusted with myself at XXX weight, because for me, my body, my proportioning  it wasn't right. BUT that doesn't mean on someone elses body it doesn't work. What this all comes to mean is that YOUR goals, should be based on YOUR body.
Someone made a comment on one of my photos saying I had their "dream body", and at first the negative voice in the back of my mind said, "pshhh you don't want this, I'm no awesome bodied gal". Then it hit me like the flying house in Oz, everyone's goals are so different. I'm sitting here picking myself apart, while someone out there is working to get to where I already am. And I understood that feeling, I remember looking at other girls wishing I could have 'that body'. I soon realized, I couldn't have THAT body, but I could have a better version of my own.

These woman all weigh 150lbs.

These woman have varying weights but because of the body compositions, it looks completely different than we too quickly assume.

We are all built differently and our bodies all look the best at certain weights. What looks good on one, might not be the best for someone else. This is why I try not to put as much emphasis on the number on the scale. Inches and the way you feel about your body are a million times more important than your bodies relationship with gravity reflected by a number.

Lift, run, eat healthy, bike, swim, or whatever you do, and do it to be the best version of you. Don't compete with anyone but the person you were yesterday!

Go out and be awesome today!
Start the week off happy and positive!

Have a great week!
-J

  4. I really want this winter to end as well! If it's not snowing here in WI, it's colder than Hell. It's getting quite tiresome. :\
